This single malt was distilled in July 2007 at the Strathmill Distillery, known for its light and fruity Speyside malt. It was matured for 19 years in a single hogshead, which previously held Pedro Ximenez - the sweetest sherry variety, which produced a rich malt with notes of muscovado sugar, stewed fruits and liquorice.
Bottled at natural cask strength, without chill-filtration or artificial colourng by North Star Spirits.
Rosewood and Chesterfield, sherry-soaked almonds.
Liquid liquorice tablet, thick and oily.
Sweet fruit bowl, stewed with dark muscovado sugar.

Strathmill Distillery, founded in 1891 in the Speyside town of Keith, is a quiet workhorse of the Scotch industry, best known for supplying its light, grassy spirit to blends. Originally a corn mill before its conversion, the distillery produces a delicate, subtly fruity whisky shaped by long fermentation, gentle distillation, and maturation largely in refill bourbon casks. The resulting style leans toward soft vanilla, cereal sweetness, fresh orchard notes, and a clean herbal edge. Though rarely seen as a single malt outside occasional independent bottlings or its Flora and Fauna release, Strathmill has a loyal niche following for its understated, classic Speyside elegance.
