Ichiro’s Malt Chichibu Distillery II Hint of Sherry is the second release from the Chichibu II distillery, which opened in 2019. The whisky is five to six years old with a touch of peated malt included in the recipe. It is matured in sherry casks and ex-bourbon barrels to create a balanced, expressive whisky. 

The hint of Sherry opens with notes of resinous peat smoke and dark chocolate along with raisins, sultanas and candied citrus. On the palate, there is vanilla and honey with a subtle baking spice character before finishing on powerful lapsang souchong and sweet smoke aromas.

Chichibu, founded in 2008 by Ichiro Akuto in Saitama Prefecture, is one of Japan’s most influential new-wave distilleries. Despite its small size, it quickly earned a global reputation for richly flavoured whiskies made with meticulous, hands-on craftsmanship. Chichibu uses a variety of cask types, local barley experiments, and traditional floor malting, producing vibrant, youthful spirits with notes of fruit, honey, oak spice, and a touch of herbal depth. Its limited releases are highly sought after, and the distillery is often credited with helping reignite worldwide excitement for Japanese whisky.
