Glenallachie Distillery
ABV: 48% 70 cL
Palo Cortado is the rarest style of Sherry that combines the dryness of Fino with the nutty and darker fruit characteristics of Oloroso. It develops when the ‘flor’ yeast layer naturally dies on a wine that was initially intended to become a Fino.
Using puncheons and hogshead casks that previously held this exceptional Sherry, the spirit develops a beautifully layered character, with notes of ripe plums, dark mocha and warming cinnamon spice.
This 11 years old release for The Wood Collection was bottled at natural colour and no chill filtration, allowing the unique character to shine through.
Cinnamon spice, butterscotch and damson plum, with notes of heather honey, raisin butter and crystalised ginger.
Toasted honeycomb, fresh brambles and baking spices, followed by maraschino cherries, mocha and plum jam, with treacle and chocolate.
Tax included.

Glenallachie Distillery was founded in 1967 by Mackinlay McPherson. It was the fourth distillery designed by William Delmé-Evans, the architect behind Macduff, Tullibardine and Jura. For many years, malt produced at Glenallachie was mainly used for blends, including as a part of Chivas Regal, with rare single malt releases. In 2017, it was purchased from the Chivas Bros. by Billie Walker, Trisha Savage and Graham Stevenson. Shortly after, in 2019, Glenallachie won the Distillery of the Year, and many more awards followed, both for the Distillery and its bottlings.
Glenallachie is known for its rich, fruity, sherry cask-aged single malts and incredible blends.
