Daftmill Distillery is situated near Cupar in Fife, making it one of just seventeen Lowland distilleries currently releasing whisky, with 6 more under construction or active but not yet releasing. What makes Daftmill unique is the traditional nature of the production schedule - Daftmill is a true farm distillery. All the barley used for production is farmed by Francis on the estate. The whisky is all distilled by Francis and Ian Cuthbert in the farm off season; two months in summer and two months in winter – this is a very traditional way of running a distillery that hasn’t been seen in Scotland since the 1800s.

This batch was distilled in winter of 2012 and it rested in 5 first fill Sherry hogshead and 7 first fill Bourbon barrels before being assembled and bottled in February 2026. Bottled at natural colour and no chill filtration.

Daftmill is a small, family-run farm distillery in Fife, established in 2005 but producing whisky in a deliberately traditional, low-volume way. Operated by the Cuthbert family, it distils only during the farm’s off-season, making it one of Scotland’s few true “farm-to-glass” distilleries. The spirit is classic Lowland in style — light, clean, and barley-forward — often showing gentle citrus, soft orchard fruit, and a crisp, malty sweetness. Releases are rare and limited, giving Daftmill a quiet cult following and a reputation for quietly superb, understated whisky.
