Cane and Grain

Caol Ila 11 Years Old Private Reserve

ABV: 58.1% 70 cL

This single malt was distilled on the 22nd of August 2013 at the Caol Ila Distillery, near Port Askaig on the Isle of Islay. Caol Ila produces a classic Islay spirit - peaty, maritime and gently oily, with a fresh, coastal character beneath the smoke.

It was selected by Cane and Grain for their Private Reserve collection, a range of elusive single casks from across Scotland's whisky regions, each given a secondary maturation in a carefully chosen first-fill cask. This cask was re-racked on the 22nd of May 2022 into a single barrique that previously held wine from Château Latour, where it matured for a further 3 years.

Smoky Islay malt and fine red wine make a bold combination, with the Latour cask adding sweetness and texture to balance the peat. Cane and Grain call it peat meets sweet, summing it up as golden, sweet, sticky barbecue.

Aged 11 years and drawn from cask number 3487, it is presented at natural cask strength of 58.1% ABV, natural colour and no chill filtration. Limited to just 266 bottles.

Nose

Full-bodied, rich, smoky notes dominate enjoyably, with subtle redcurrants.

Palate

Latour most apparent, providing a texture that belies the age of the cask.

Finish

Sticky, viscous texture with a long-lasting dry note, slightly spicy.

Caol Ila distillery logo

The name Caol Ila derives from the Gaelic "Caol Ìle", which means "The Sound of Islay". The distillery's journey began in 1846 when it was founded by Hector Henderson. Despite his previous experience at Littlemill, the distillery did not succeed and changed hands in 1854. 9 years later, it was sold again, this time to Bulloch Lade & Co., who expanded production. The distillery faced more changes in ownership and a few closures up to the 1970s when the old buildings were demolished and replaced by larger ones, and additional stills were installed, making it once again the largest distillery on the island. Since 2004, Caol Ila has been a part of Diageo's portfolio, bottling single malts, as well as using the liquid for Johny Walker blends.
It is known for being one of the most delicate whiskies on the island, wich light colour, citrusy flavours and ashy peat.
