The Wood Collection from the Glenallachie Distillery concentrates on different wood finishes and how they influence the spirit. This incredible single malt has been finished in Fino Sherry Hogsheads. Maturation in former Fino hogshead casks has resulted in a single malt bursting with stewed pear, sugared almonds and vanilla custard tones.

Known for its pale appearance and delicate flavour profile, Fino is the driest style of Sherry. It must be biologically aged for at least two years under a ‘flor’: a yeast layer which prevents oxidation.  

TASTING NOTES

NOSE Nutmeg, heather honey and vanilla extract, with butterscotch, green apple peel, stone fruits and roasted almonds.
PALATE Dried apricots, honeycomb and butterscotch, followed by baking spices, marzipan and caramel, with orchard fruits and citrus on the finish.
